The production process of freeze-dried food basically has four steps: pretreatment, quick freezing, sublimation dehydration, and post-treatment. All equipment of the production line and the workshop for installing equipment shall be reasonably arranged according to the production process. The layout and production schedules are related to production efficiency.
Cleaning machine and container: used to clean the soil and surface residues of fruits and vegetables.
Multi-purpose slicer: it is used to cut raw materials into thin slices of a certain thickness, which is convenient for unifying the freeze-drying time and accelerating the freeze-drying speed. Domestic ones can be used.
Cooling tank: the cooling tank after killing can be replaced by a cleaning tank. Generally, for the cooling and drainage of tap water in a simple production line, an oscillating drainage machine can be selected, and a centrifuge is generally selected for dehydration.
Quick freezing storehouse: the configuration of the quick freezing storehouse is compatible with the processing capacity of the freeze dryer. It is appropriate to produce ingredients on a daily shift and meet the freeze-drying requirements of 2 ~ 3 shifts. The cold source shall be set separately or semi separately (the low-pressure circulation part is independent) to prevent the cooling temperature in the freeze-drying process from being affected when the heat load of the quick freezing warehouse is large.
Freeze drying workshop: the freeze-drying workshop is a key process for the production of freeze-dried food. At the same time, its setting should take into account the impact of product quality. Generally, the shorter the distance between the quick freezing warehouse and the freeze-drying box door, the better. Moreover, this channel should only be used as a logistics channel, not also as a human circulation channel. The door end of the freeze-drying box should be separated from other parts and equipment of the freeze-drying machine, To reduce environmental pollution to semi-finished products.
Unloading and packaging room: the unloading and packaging room shall be closed, the ground shall be waxed with terrazzo at least, the wall shall be pasted with white ceramic tiles to a height of 1.5m, and the above parts shall be painted with white waterproof paint. The workshop must be equipped with air conditioning dehumidification equipment, which can be used with the cold storage system. The rotary dehumidifier should be selected for dehumidification equipment to reduce the dehumidification cost. The workshop has no windows and the door shall be closed as much as possible, The sealed door of the dust-free purification room shall be adopted, and there shall be ventilation, disinfection, sterilization, and other facilities. Generally, stainless steel workbench and vacuum and nitrogen filling sealing machine shall be provided during packaging. Water ring vacuum pump shall be selected as the vacuum pumping equipment, with a pumping speed of about 20L / s. The nitrogen filling gas source is industrial nitrogen, which can be filled through decompression filtration.
