As a fruit with a moisture content of up to 90%, strawberry's high water content provides ideal conditions for the reproduction of bacteria and mold, which is also the main reason why strawberries are perishable. The industrial food freeze dryer uses the principle of water sublimation for drying. Through a precisely controlled process, it can effectively remove 90% of the moisture in fresh strawberries, significantly extending the shelf life of strawberries. In the freeze-drying process, fresh strawberries are first quickly frozen at low temperatures, and then dehydrated in a suitable vacuum environment through the process of direct sublimation of water molecules into water vapor.
