The working principle of vacuum freeze dryer is a drying technology based on the principle of sublimation. It freezes the dried material quickly at low temperature, and then sublimates the frozen water molecules directly into the process of water vapor escaping in an appropriate vacuum drying oven environment. The result of freeze-drying is called lyophilized material.

The material is always in a low temperature (frozen state) before drying, and the ice crystals are evenly distributed in the material, so the sublimation process will not be concentrated due to dehydration, and the side effects such as foam and oxidation caused by water vapor are avoided. The dry material is as porous as dry sponge, and its volume is basically unchanged.
