Freeze-drying is a drying technology based on the principle of sublimation. It is a process in which the material to be dried is rapidly frozen at a low temperature, and then the frozen water molecules undergo direct sublimation into water vapor, escaping in a suitable vacuum environment
The coffee material has been kept at a low temperature (frozen state) before drying, and the ice crystals are evenly distributed in the coffee, so the sublimation process will not be concentrated due to dehydration, and there will be no side effects such as foaming and oxidation caused by water. After drying, the internal structure of coffee is loose and porous, and the dissolution speed is fast, so it is extremely easy to dissolve in water and restore its original state. Vacuum freeze drying technology retains the original flavor of coffee.
Commercial freeze dry machine has the advantage of low drying temperature, which can retain the heat-sensitive substances in food, and various components will not be damaged. The freeze-dried material can be quickly and completely restored to its original state after the addition of water.
