The reason why freeze-drying is called freeze-drying is because compared with the traditional drying method, there is a significant change in temperature. The freeze-drying machine is basically carried out below 0 °C, that is, it is carried out in the frozen state of the product, and the product residue is only reduced in the later stage. In the case of moisture, let the product rise to above 0°C, but generally not more than 40°C. Under vacuum conditions, the grain column still maintains the direct sublimation of water vapor when it freezes, and a large number of air bubbles remain on the ice shelf, making its volume almost unchanged. Before reuse, it can be redissolved by injecting specific water.

When the drying chamber and the freezing chamber are separated, there is no need for thermal insulation, and the heat loss is very small, so the heat energy is economical and practical.
