Lyophilization, known as freeze drying(FD), is basically the sublimation of products under vacuum condition. In the food industry, FD can keep 95% of the food’s nutrition whereas it’s color and flavor does not change a lot. Freeze dried food has a much longer expiration date without needing to put in the refrigerator.

Freeze drying is a high added-value, high-technology oriented new industry, it plays an important role for countries that have plenty of resources, large number of populations but lacking of techniques processing agricultural products.

By promoting this industry in vegetables& fruits’  production base, local agricultural product resources can be consumed, also, certain amount of foreign exchange could be earned. Apart from that, employment problem of the agricultural population can be solved, the overall income of agricultural population would increase.

Once the proper FD equipment is chosen, with the suitable condition of FD, lyophilization’s cost would be relatively low, and good-quality FD food would be produced. High profit with low risk, that is the reason why FD technic should be promoted and supported by the government in the future.

FD technique shows an more popular trend in lots of countries nowadays, it is and will become an integral part of people’s everyday life. The economy of the society and the development of science technique influences each other, shows an positive trend, ultimately will promote the progress of freeze drying technology.
