There are different methods of drying, and most of the drying method operates under the condition that temperature is higher, or even much higher than 0℃. The products obtained by drying generally have the problems of shrinking volume and hardening texture, most of the volatile components will be lost, some heat-sensitive substances denaturation, deactivation, and some substances even oxidation. Therefore, the dried product is very different from the pre-dried product in terms of its properties. However, freeze drying generates under 0℃ mostly, the temperature will not rise until the moisture in product is mostly removed. Therefore, freeze drying technique has much more  advantages, and I will be listing them below.

1.    During the freeze drying process, the enzymes in micro-organisms can not function well, so it can maintain its original property.

2.    While sublimating, inorganic salts that dissolved in water will be sublimated, and this would avoid problems of hardened texture.

3.    Lots of heat-sensitive substance will not denatured or deactivated.

4.    Under low-temp drying, there is small loss of volatile substance.

5.    Since the drying process happens under frozen conditions, the volume will not change, structure is maintained as before.

6.    Freeze dryers can get rid off 95 – 99% moisture in the material, so the product is able to be preserved in long-term.

7.    The dried substance can dissolve in water completely in a short time, and can be in its original state immediately.
