The starter freeze dryer is a device specially used for processing microbial products such as starter, which preserves the activity and stability of the starter through vacuum freeze drying technology.
Functions and features

Process

The vacuum freeze drying method to prepare starter cultures is to freeze the necessary micro-organisms cell liquids first, then sublimates ice under the vacuum condition, to reach the drying purpose. In developed countries, this method has been widely applicated.  

Dried micro-organisms have slow metabolism, and its production are restricted, micro-organisms reach dormant state, therefore it can maintain strains' original properties. Freeze dried starter cultures' most significant advantage is that it has a higher amount of living bacteria, longer shelf-life and easy to be transported. There are three steps required to make the lyophilized starter cultures, which are enrichment culture, collecting and concentrating, and freeze drying respectively.

Firstly, comparing to other starter cultures, lyophilized starter cultures are more active. Only a small amount of lyophilized starter cultures would be enough for making dairy products. For example, there is specialized yoghurt's starter, straw starter and even fertilizer starter. Thirdly, lyophilized starter cultures don't have the concern of its strains being damaged, unlike other starter cultures, change in temperature and humidity would influence their strains.
