In recent years, as the freeze drying technology becoming more and more popular, noodle freeze dryers are being used for processing noodle.

Freeze dried instant noodle relies on freeze drying technology, tries best to maintain the taste of noodle with good reconstitution property.  According to the requirements of eutectic point of noodles, the cryogenic freeze dryer can prefreeze the noodles for 300 minutes at -40 and crystallize into solid. Then, a drying stage was carried out in the contact lyophilizer under the vacuum environment of 20~30PA. The drying temperature was -40~+60 for about 600 minutes. At this time, more than 80% of the moisture was removed. The remaining 20% of the water, including 10% of the combined water, needs to enter the analytical drying stage. The analytical drying process is run according to the PLC computer setting program of FZG lyophilizer, and the setting data includes vacuum control data, temperature control data and operation time data. The freeze-drying technology of noodles is aiming to achieve the goal that freeze-dried instant noodles can rehydrated in 5~8 minutes to maintain the original toughness and taste, and the basic requirements of nutrients remain unchanged. Avoiding the situation that freeze - dried noodles are dry, and unable to rehydrate.
