With the application of freeze-drying technology in the deep processing of aquatic products vacuum freeze-drying, the freeze-dried instant shrimps produced by the freeze-drying machine can not only retain the original biological characteristics of fresh shrimp, such as nutrients, color and appearance, but also have crisp meat and good taste. At the same time, it also solves the problems that the traditional processing technology of dried shrimp is mainly hot air drying or sun drying, the product is hard and the taste is poor.
The freeze-drying technology of aquatic products, the freeze-drying process of instant crispy shrimp produced by the freeze-drying machine, and the main steps are as follows:

1. Blanching: blanch the shrimps with hot water and cool them with cold water immediately after blanching;
2. Seasoning: soak the boiled and cooled shrimps in seasoning solution for seasoning, drain and then directly stir twice for seasoning;
3. Vacuum freeze drying (freeze drying):
3.1. Pre freezing stage: dish the seasoned and drained shrimps and place them in a new generation of food lyophilizer with pre freezing function for pre freezing;
3.2 Drying stage: vacuum freeze-drying process with different temperature and different heating rate,vacuum degree is adopted. After pre freezing, reduce the temperature in the condensing cylinder to - 25°Cand start evacuation for sublimation drying. When the temperature rises from - 25°C to 30°C~ - 35 °C, the heating process is as follows: a. when the temperature rises from - 25 °C to - 15°C, the vacuum degree is maintained between 13pa and 20Pa; b. When - 15 °Crises to 0 °C, the vacuum degree remains below 20Pa; c. When 0 °Crises to 10 °C, the vacuum degree shall be kept below 20Pa; d. When the temperature of shrimps reaches the maximum set temperature of 30°C ~ 35°C and the vacuum degree approaches the limit vacuum degree below 4pa, in order to ensure that all shrimps are freeze-dried, keep the vacuum degree below 4pa for 6h-8h.
4. Packaging: after drying, pressurize to atmospheric pressure, take out the shrimps and seal them with double-layer plastic bags or cans to prevent the shrimps from absorbing moisture.
