Principle of Freeze Drying Technique
Freeze drying technology is a special drying technique, the basic principle of freeze drying depends on the 3 phase change of water. The 3 phase of water are solid state, liquid state and gas state respectively. The three phase of water can exists on the same time and is interchangeable. As we can see from the graph below, the temperature three phase indicates are 0.01℃, the pressure of water vapor is 6.105×10-4MPa, under this condition, water, ice, and water vapor exist on the same time with balance to each other. Once the pressure of water vapor is larger than 6.105×10-4MPa, the ice will melt into water state, and water will be vaporized to steam, this is the process of vaporization. When the steam pressure is lower than 6.105×10-4MPa, the ice will sublimate into steam, and this is the process of sublimation.
Vacuum freeze drying uses this principle, the raw material is pre-freeze to - 30 to - 40℃, therefore, most of the moisture in the raw material can be frozen into ice. Under vacuum conditions, ice will be sublimated into water vapor, eventually, the raw material is dried.
Unlike the traditional method, drying with high temperature only involve one single change in phase, whereas freeze drying involve two changes. Apart from that, the freeze dried materials are porous with loose structure, and have better water rehydration ability, which is convenient for subsequent processing or direct consumption.
