The freeze-dried banana slices are crisp and have no astringency. They maintain the original nutrition and appearance of the banana and have a strong aroma of fresh banana. The freeze-drying process is as follows: fresh fruit harvesting, picking, sterilization, cleaning, peeling, pre-freezing, slicing, freezing, vacuum freeze-drying, warehousing and packaging inspection.

1. Fresh fruits are harvested and fresh bananas are purchased

3, sterilization with 300ppm sodium hypochlorite solution, soak the banana for 15 minutes.

4. Remove the banana and rinse it with clean water until there is no sodium hypochlorite residue.

5. Peel the skin artificially and take the flesh.

6. Pre-freeze to a certain temperature in the cold storage.

7. Slice Under low temperature, put the banana into the slicer and slice it with a thickness of 0.6-0.8cm.

8. The eutectic point of frozen banana is -33± L ℃. Generally, the freezing temperature is 5-10℃ lower than the eutectic point temperature of material, so the freezing temperature of banana is -40℃. It takes a certain time for the material to be completely frozen, and it lasts for 2~3 hours after reaching the freezing temperature.

9. Vacuum freeze-drying Set the vacuum degree, hydrazine temperature, heating plate temperature and time of the food freeze-drying machine to carry out vacuum freeze-drying.

10. At the end of vacuum freeze drying, control the temperature and relative humidity of the environment, and then pack out of the warehouse.
