Drying is a traditional technique used to preserve food. However, drying of dusts and biological products always cause irreversible agglomeration of particles, and this problem especially occurs when preparing small powder, the nano-particles in liquid stated are dried and agglomerated strongly. Esters, mainly because during ordinary drying, water is dispersed in the pores between the particles. The surface tension results in extremely high additional pressures that push the particles together to form clumps.

Freeze-drying can avoid this problem. Freeze-drying involves freezing a gel or blood into a solid and then vaporizing and removing water under reasonable conditions by sublimation. Since the vaporization process of ice does not affect the coalescence of solid particles, it can be well preserved. The particles are not compressed and condensed. In addition, freeze-drying is very suitable for handling biological products, such as blood, because it is not operated at high temperatures and can prevent the biological products from spoiling.
